Get to know the creator of Pasta Remoli, Simone Remoli

We had the pleasure of sitting down with the owner & creator of the renowned Pasta Remoli, Simone Remoli!

What inspired you to open Pasta Remoli?

Pasta Remoli was inspired by my passion for authentic Italian cuisine and a desire to bring the true taste of Italian pasta to London that was missing when I started, 13 years ago. Growing up in Italy, surrounded by the rich culinary traditions of my home city, I envisioned a place where people could experience the genuine flavours and textures of homemade pasta dishes at an accessible price for everyone.

 

Can you tell us about the journey that led you to this point?

My journey to opening Pasta Remoli has been one of dedication and hard work. After completing my culinary training in Italy, I gained experience working in various renowned restaurants in London like Locanda Locatelli, Roka and Bocca Di Lupo. With the support of my wife Francesca, I embarked on the journey of opening the first Pasta Remoli with her in Westfield Stratford in 2011, just before the Olympics, turning my dream into a reality.

 

What sets Pasta Remoli apart from other Italian restaurants?

Pasta Remoli sets itself apart through its commitment to authenticity and quality. Using only the finest ingredients mostly sourced directly from Italy, Pasta Remoli crafts handmade pasta dishes, bread, desserts that capture the true essence of Italian cuisine. But it’s not just about the food – we’ve got a laid-back and friendly vibe that makes everyone feel right at home. Our team is all about making sure you have a great time, whether you’re popping in for a quick bite or settling in for a leisurely meal.

 

 

Could you share a bit about the process of crafting your pasta dishes? What makes them unique?

Pasta Remoli’s pasta dishes are crafted using traditional Italian techniques and the finest flours and fresh eggs. Each dish is handmade with care and attention to detail, resulting in a texture that is both delicate and robust. What makes Pasta Remoli’s pasta unique is the passion for research of quality products that goes into every step of the process, ensuring that each dish is a true reflection of authentic Italian cuisine.

 

What are some of the signature dishes at Pasta Remoli, and which one is your personal favourite?

Signature dishes at Pasta Remoli include for sure the classic Carbonara, as it is the authentic recipe of our Natal city Rome, with Guanciale and Pecorino Romano. The indulgent Truffle Ravioli are also very popular and so are the flavourful Tagliatelle al Ragù. While all dishes are beloved, my personal favourite is the Arrabbiata – a very simple and tasty dish featuring fresh tomato sauce from Sarno with a chilly and garlic soffritto. So Tasty!!

If you could have one meal for the first time again, what would it be and why?

If I could experience one meal for the first time again, it would undoubtedly be the Sunday Parmigiana di Melanzane prepared by my Mamma Viviana. No one can beat my mum when it comes to Parmigiana, not even myself!! It’s a must every time I go back to Rome to spend time with her. I’m not sure as she does it so special.

 

What was your favourite childhood meal?

I will have to mention two: Tortellini in Brodo and Spaghetti Amatriciana. They bring back memories of joyful times in my Nonna’s kitchen. The smell of tortellini in brodo reminds me of festive family gatherings, while Amatriciana brings warmth and comfort from cosy dinners at home. These dishes hold a special place in my heart, representing love and cherished moments with family.
